Ingredients

  • 2 cups Cooked rice
  • 40 grams Tamarind
  • 1 cup Water
  • 3 tablespoons Sesame oil
  • 1 teaspoon Mustard seeds
  • 2 teaspoons Chana dal (split chickpeas)
  • 2 teaspoons Urad dal (split black gram)
  • 2 tablespoons Peanuts
  • 4 Dried red chilies
  • 1 sprig Curry leaves
  • 1 teaspoon Turmeric powder
  • 0.5 teaspoon Hing (asafoetida)
  • 1 teaspoon Salt
  • 0.5 teaspoon Jaggery
  • 2 tablespoons Groundnuts (roasted peanuts)
  • 3 tablespoons Puliyogare Masala Powder

Directions

Step 1

Soak the tamarind in 1 cup of warm water for 10 minutes to soften it. Squeeze and extract tamarind water, discarding the pulp.

Step 2

Heat sesame oil in a large pan over medium heat. Add mustard seeds and allow them to splutter.

Step 3

Add chana dal and urad dal, sauté until they turn golden brown.

Step 4

Add peanuts and fry until they are roasted well.

Step 5

Break the dried red chilies into halves and add them along with curry leaves to the pan. Sauté until the curry leaves crisp up.

Step 6

Pour the tamarind extract into the pan. Stir in turmeric powder, hing, and salt. Bring the mixture to a boil.

Step 7

Add jaggery and mix well. Allow the mixture to simmer and thicken until the oil separates from the sides of the pan.

Step 8

Stir in the puliyogare masala powder and mix thoroughly.

Add the cooked rice into the pan in portions, mixing gently but thoroughly to ensure the rice is well-coated with the tamarind mixture.

Step 10

Finally, garnish with roasted groundnuts and mix gently.

Serve the puliyogare warm and enjoy it with papad or curd.
