Ingredients

  • 2 lbs carrots
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter
  • 3 tbsp all-purpose flour
  • 1.5 tsp baking powder
  • 2 tsp vanilla extract
  • 3 large eggs
  • 2 tbsp powdered sugar (optional for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish with butter or non-stick cooking spray.

Step 2

Peel and chop the carrots into small chunks. Boil the carrots in a large pot of water until fork-tender, about 15-20 minutes. Drain well.

Step 3

In a large mixing bowl, mash the drained carrots until smooth using a potato masher or an immersion blender. Let the carrots cool slightly.

Step 4

Add the granulated sugar, unsalted butter, flour, baking powder, and vanilla extract to the mashed carrots. Stir until fully combined.

Step 5

In a separate small bowl, beat the eggs until they are moderately frothy. Gradually fold the beaten eggs into the carrot mixture until well incorporated.

Step 6

Pour the carrot mixture into the prepared baking dish, spreading it out evenly.

Step 7

Bake in the preheated oven for 50-60 minutes, or until the top is set, golden brown, and slightly puffed.

Step 8

Remove from the oven and allow the soufflé to cool slightly before serving. Dust with powdered sugar if desired.

Step 9

Serve warm as a side dish or dessert. Enjoy!
