Step 1: Roast the onion and ginger by placing them over an open flame or under a broiler until the outside is charred. This should take about 5 minutes. Let them cool, then peel and slice the ginger. Cut the onion into quarters.
Step 2: In a large stockpot, add the whole chicken and fill the pot with 4 liters of water. Bring to a boil over high heat and then reduce to a simmer.
Step 3: Skim off any scum that forms on the surface of the water. Add the charred onion, ginger, fish sauce, whole cloves, cinnamon stick, star anise, sugar, and salt. Simmer the broth for about 1-1/2 hours, occasionally skimming the surface.
