Ingredients

  • 1 pound Ground beef
  • 1 Yellow onion, diced
  • 2 Garlic cloves, minced
  • 1 packet Taco seasoning mix
  • 1 can (10 ounces) Diced tomatoes with green chilies (Rotel)
  • 2 cans (10 ounces each) Red enchilada sauce
  • 12 Corn tortillas
  • 2 cups Shredded Mexican blend cheese
  • 0.5 cup Sour cream (optional, for serving)
  • 2 tablespoons Chopped fresh cilantro (optional, for garnish)
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly spray a 9x13-inch baking dish with non-stick cooking spray.

Step 2

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it into crumbles as it cooks. Drain off any excess grease.

Step 3

Add the diced onions and minced garlic to the skillet and cook until the onions become translucent, about 3-4 minutes.

Step 4

Stir in the taco seasoning mix and diced tomatoes with green chilies (do not drain the can). Allow the mixture to simmer for about 5 minutes to combine flavors.

Step 5

Spread a thin layer of enchilada sauce (about half a can) evenly across the bottom of the prepared baking dish.

Step 6

Layer six corn tortillas over the sauce, slightly overlapping them to cover the bottom of the dish.

Step 7

Spoon half of the beef mixture evenly over the tortillas, then sprinkle 1 cup of the shredded Mexican cheese on top.

Step 8

Pour another half can of enchilada sauce over the cheese layer, spreading it evenly.

Step 9

Repeat the layers: tortillas, remaining beef mixture, 1 cup cheese, and another half can of enchilada sauce.

Step 10

Finish by topping the casserole with the remaining tortillas and pouring the final can of enchilada sauce over the top layer, making sure all the tortillas are covered.

Step 11

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 20 minutes.

Step 12

Remove the foil and bake uncovered for an additional 10 minutes or until the cheese is bubbly and lightly golden.

Step 13

Allow the casserole to rest for 5-10 minutes before serving. Optionally, garnish with chopped fresh cilantro and serve with a dollop of sour cream if desired.
