Ingredients

  • 400 g spaghetti pasta
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 800 g crushed tomatoes (canned)
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp red pepper flakes
  • 1 tsp sugar
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 4 fresh basil leaves, torn
  • 50 g Parmesan cheese, grated (optional)
  • 3 L water
  • 1 tbsp salt (for pasta water)

Directions

Step 1

Bring 3 liters of water to a boil in a large pot. Add 1 tablespoon of salt to the boiling water.

Step 2

Add the spaghetti pasta to the boiling water and cook according to package instructions or until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 3

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the diced onion to the skillet and sauté until softened, about 3-5 minutes.

Step 5

Stir in the minced garlic and cook for 1 minute or until fragrant.

Step 6

Add the crushed tomatoes, tomato paste, dried oregano, dried basil, red pepper flakes, sugar, salt, and black pepper to the skillet. Stir well to combine.

Step 7

Lower the heat to a simmer and cook the sauce for 15-20 minutes, stirring occasionally, until it thickens and the flavors meld together.

Step 8

Stir in the chopped parsley and torn basil leaves during the last 2 minutes of cooking.

Step 9

If the sauce is too thick, add some reserved pasta water, 1/4 cup at a time, until the desired consistency is reached.

Step 10

Add the cooked spaghetti to the skillet with the sauce and toss until well coated.

Step 11

Serve immediately, topped with grated Parmesan cheese if desired.
