Ingredients

  • 1 head red cabbage
  • 2 pieces apple
  • 1 medium onion
  • 2 tablespoons coconut oil
  • 3 tablespoons apple cider vinegar
  • 100 milliliters orange juice
  • 0.25 teaspoon ground cloves
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Remove the outer leaves of the red cabbage and rinse it well under cold water. Cut the cabbage into quarters and remove the core. Finely shred the cabbage.

Step 2

Peel and core the apples, then slice them thinly.

Step 3

Peel and finely chop the onion.

Step 4

In a large saucepan, heat the coconut oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until the onion is translucent.

Step 5

Add the shredded cabbage to the pan and stir well, cooking for another 5 minutes until it begins to wilt.

Step 6

Add the sliced apples and mix together with the cabbage and onions.

Step 7

Pour in the apple cider vinegar and orange juice, stirring to combine.

Step 8

Add the ground cloves, bay leaf, salt, and black pepper to the pan and mix all the ingredients thoroughly.

Step 9

Reduce the heat to low, cover the pan, and let the mixture simmer gently for 45 to 60 minutes, or until the cabbage is tender and the flavors have melded together. Stir occasionally to prevent sticking.

Step 10

Adjust seasoning with additional salt and pepper if necessary, remove the bay leaf, and serve the Paleo Rotkraut warm as a flavorful side dish.
