  • 4 pieces boneless, skinless chicken breasts
  • 8 slices bacon
  • 2 tablespoons olive oil

  • 200 grams mushrooms, sliced
  • 1 tablespoon fresh thyme leaves
  • 400 grams canned tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped parsley

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

In a large skillet over medium heat, cook the bacon slices until crispy. Remove the bacon and set it aside on a paper towel-lined plate. Reserve the bacon fat in the skillet.

Season the chicken breasts with salt and black pepper. In the same skillet with the bacon fat, add 1 tablespoon of olive oil, and sear the chicken breasts for about 3-4 minutes on each side until browned but not cooked through. Transfer to a baking dish.

In the same skillet, add the remaining 1 tablespoon of olive oil, onion, and garlic. Sauté for about 3 minutes until the onion becomes translucent.
