  • 4 cups chicken broth
  • 1 inch piece, sliced ginger
  • 4 sliced shiitake mushrooms

  • 2 sliced scallions
  • 1 small, julienned carrot
  • 1 tablespoon coconut aminos

Directions

Step 1

Rinse the edible bird's nests gently in cold water to remove surface impurities. Soak them in a bowl of water for about 20 minutes until they expand and soften.

Step 2

In a large pot, bring the chicken broth to a simmer over medium heat.

Step 3

Add the sliced ginger and let it simmer for 5 minutes to infuse the broth with flavor.
