Ingredients

  • 0.5 cup Coconut flour
  • 6 large Eggs
  • 0.5 cup Coconut milk
  • 4 slices Bacon strips
  • 0.5 cup Cashews
  • 1 tablespoon Lemon juice
  • 2 tablespoons Nutritional yeast
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 tablespoon Coconut oil
  • 0.25 teaspoon Baking powder
  • 1 teaspoon Honey

Directions

Step 1

Soak cashews in hot water for at least 15 minutes.

Step 2

Preheat oven to 350°F (175°C).

Step 3

Mix 4 eggs, coconut flour, coconut milk, baking powder, and honey in a bowl to form a smooth batter.

Step 4

Grease a small loaf pan with coconut oil and pour in the batter. Bake for 18-20 minutes or until a toothpick comes out clean.

While bread is baking, cook bacon in a pan over medium heat until crispy. Set aside on paper towels to drain excess oil.

In a blender, combine drained cashews, lemon juice, nutritional yeast, and a pinch of salt with a few tablespoons of water. Blend until smooth, adding more water if needed for a creamy consistency.
