Ingredients

  • 2 tablespoons vegetable oil
  • 3 units garlic cloves, minced
  • 3 units shallots, thinly sliced
  • 1 inch ginger, sliced
  • 2 medium carrot, sliced
  • 1 large potato, diced
  • 1 cup cabbage, roughly chopped
  • 1 cup green beans, cut into 1-inch pieces
  • 1 large tomato, chopped
  • 6 cups water
  • 2 units chicken bouillon cube
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons celery leaves, chopped
  • 2 tablespoons fried shallots, for garnish

Directions

Step 1

Heat the vegetable oil in a large pot over medium heat.

Step 2

Add the minced garlic, thinly sliced shallots, and sliced ginger. Sauté until fragrant and slightly golden, about 3-4 minutes.

Step 3

Add the sliced carrots and diced potatoes to the pot. Stir and cook for another 5 minutes.

Stir in the chopped cabbage, green beans, and tomato. Cook for another 3 minutes, allowing the vegetables to soften slightly.

Step 5

Pour the water into the pot and bring to a boil.

Step 6

Add the chicken bouillon cubes, salt, and black pepper. Stir until the bouillon cubes are dissolved.

Step 7

Reduce the heat to low and simmer the soup for about 20-25 minutes, or until the vegetables are tender.

Step 8

Adjust the seasoning with additional salt and pepper if needed.

Step 9

Stir in the chopped celery leaves just before serving.

Step 10

Serve hot, garnished with fried shallots for a crunchy topping.
