Ingredients

  • 250 grams Fresh shrimp, peeled and deveined
  • 30 grams Pork fat, chilled
  • 2 tablespoons Cornstarch
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper
  • 1 teaspoon Sesame oil
  • 250 milliliters Water
  • 90 grams Wheat starch (also known as tang flour)
  • 40 grams Tapioca starch
  • 2 teaspoons Cooking oil

Directions

Step 1

Chop the shrimp and pork fat finely or process in a food processor until coarsely minced.

Step 2

In a mixing bowl, combine chopped shrimp and pork fat with cornstarch, sugar, salt, white pepper, and sesame oil. Mix well and set aside to marinate.

Step 3

In a small saucepan, bring 250ml water to a boil. Remove from heat, and quickly mix in wheat starch and tapioca starch using a spatula. Stir vigorously until you have a cohesive dough.

Step 4

Turn the dough out onto a lightly dusted cornstarch surface and knead while it is hot (be cautious with temperature) until smooth.

Step 5

Divide the dough into 24 equal pieces and cover with a damp cloth to prevent drying.

Step 6

Using a small rolling pin, roll each piece of dough into a thin circle about 7cm in diameter.

Step 7

Place about a teaspoon of the shrimp filling onto the center of each wrapper. Gently fold the wrapper over the filling to form a half-moon shape and press the edges to seal.

Step 8

Arrange dumplings in a single layer in a bamboo steamer lined with parchment paper or cabbage leaves to prevent sticking.

Step 9

Steam the dumplings over boiling water for 6-8 minutes, or until the shrimp filling is cooked through.

Step 10

Remove from steamer and serve hot with your choice of dipping sauce.
