Ingredients

  • 300 grams egg noodles
  • 2 tablespoons vegetable oil
  • 1 medium onion
  • 3 cloves garlic
  • 1 medium carrot
  • 100 grams green cabbage
  • 1 medium red bell pepper
  • 200 grams chicken breast
  • 3 tablespoons soy sauce
  • 2 tablespoons ketjap manis (sweet soy sauce)
  • 2 tablespoons oyster sauce
  • 0.5 teaspoon ground white pepper
  • 2 pieces spring onions

Directions

Step 1

Start by boiling a large pot of water. Once boiled, add the egg noodles and cook until al dente according to package instructions. Drain and set aside.

Step 2

Finely slice the onion and garlic. Julienne the carrot and slice the green cabbage and red bell pepper into thin strips.

Step 3

Cut the chicken breast into thin strips.

Step 4

In a large wok or non-stick pan, heat 2 tablespoons of vegetable oil over medium-high heat.

Step 5

Add the sliced onion and garlic to the pan. Stir-fry for about 2 minutes until fragrant and slightly translucent.

Step 6

Add the chicken strips to the pan and stir-fry until they are cooked through and golden brown, about 4-5 minutes.

Step 7

Add the carrots, cabbage, and red bell pepper to the pan. Stir-fry for another 3 minutes until the vegetables are tender but still crisp.

Step 8

Return the drained noodles to the pan. Toss everything together gently to combine.

Step 9

In a small bowl, mix together soy sauce, ketjap manis, and oyster sauce. Pour this sauce over the noodles and vegetables. Add the ground white pepper.

Step 10

Toss all ingredients in the pan thoroughly to ensure the noodles are well coated with the sauce and heated through.

Step 11

Finely slice the spring onions and add them to the pan. Stir them in just before serving for a fresh touch.

Step 12

Serve immediately, garnishing with additional sliced spring onions if desired.
