Ingredients

  • 400 grams Beef steak (rib-eye or sirloin)
  • 1 teaspoon Salt
  • 1 teaspoon Freshly ground black pepper
  • 2 tablespoons Olive oil
  • 1 large Garlic clove
  • 2 tablespoons Fresh lemon juice
  • 100 grams Rocket (arugula)
  • 1 teaspoon Balsamic vinegar (optional)
  • 15 grams Parmesan shavings (optional)

Directions

Step 1

Take the steak out of the fridge about 30 minutes before cooking to bring it to room temperature.

Step 2

Season the steak liberally with salt and freshly ground black pepper on both sides.

Step 3

Heat a heavy-based skillet or grill pan until it is very hot. Add 1 tablespoon of olive oil.

Step 4

Place the steak in the skillet and cook for 2–3 minutes on each side for medium-rare, or adjust the cooking time to your preferred level of doneness.

Step 5

Remove the steak from the pan and let it rest on a plate for 5 minutes to allow the juices to redistribute.

Step 6

While the steak rests, heat the remaining 1 tablespoon of olive oil in the same skillet over low heat. Crush the garlic clove with the flat side of a knife but leave it whole. Add it to the oil and gently heat until fragrant (about 1 minute), being careful not to let it burn.

Step 7

Remove the skillet from the heat and stir in the lemon juice. Mix well to create the warm dressing.

Slice the steak thinly against the grain, aiming for even slices about 0.5 cm thick.

Step 9

Arrange the rocket (arugula) on a serving platter, then lay the sliced steak on top. Drizzle the warm garlic-lemon dressing over the steak and greens.

If using, drizzle the balsamic vinegar over the top and scatter parmesan shavings for an added touch of richness.
