  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 50 grams Unsalted butter (for serving, optional)
  • 5 whole Sage leaves (optional)

Directions

Step 1

Wash the fresh spinach thoroughly, removing any tough stems. Bring a large pot of water to a boil and blanch the spinach for 1-2 minutes until wilted. Drain and immediately transfer the spinach to a bowl of ice water to retain its bright green color.

Squeeze out as much water as possible from the spinach, then finely chop it.

In a large mixing bowl, combine the chopped spinach, ricotta cheese, grated Parmesan cheese, egg, nutmeg, salt, and black pepper. Mix with a wooden spoon until fully incorporated.
