Ingredients

  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter, softened
  • 1.75 cups Granulated sugar
  • 4 Large eggs
  • 0.5 cups Freshly squeezed lemon juice
  • 1 tablespoon Lemon zest
  • 0.5 cups Whole milk
  • 1 cups Powdered sugar
  • 2 tablespoons Fresh lemon juice (for glaze)
  • 1 teaspoon Lemon zest (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 3–4 minutes.

Step 4

Add the eggs one at a time to the butter mixture, beating well after each addition until fully incorporated.

Step 5

Mix in the lemon juice and lemon zest. The mixture may look slightly curdled, but this is normal.

Step 6

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined. Do not overmix.

Step 7

Pour the batter into the prepared cake pan and use a spatula to smooth the top.

Step 8

Bake in the preheated oven for 40–45 minutes or until a toothpick inserted in the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then turn it out onto a wire rack to cool completely.

Step 10

While the cake is cooling, prepare the lemon glaze by whisking together the powdered sugar and 2 tablespoons of fresh lemon juice in a small bowl until smooth.

Step 11

Once the cake has cooled, drizzle the lemon glaze evenly over the top. Garnish with additional lemon zest, if desired.

Step 12

Slice and serve! Store any leftovers in an airtight container at room temperature for up to 3 days.
