Ingredients

  • 3 large ripe bananas
  • 113 grams unsalted butter
  • 150 grams granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoons salt
  • 2 tablespoons milk
  • 60 grams chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, mash the ripe bananas with a fork until smooth.

Step 3

Melt the unsalted butter in a microwave or on the stovetop, then add it to the mashed bananas and mix well.

Step 4

Add the granulated sugar, eggs, and vanilla extract to the banana mixture. Whisk until combined and smooth.

Step 5

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 6

Gradually fold the dry ingredients into the wet ingredients, mixing just until combined. Do not overmix.

Step 7

Add the milk and stir gently until incorporated. If using chopped walnuts, fold them into the batter.

Step 8

Pour the batter evenly into the prepared loaf pan, smoothing the top with a spatula.

Step 9

Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove the banana bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

Step 11

Serve as is or with a spread of butter. Enjoy!
