Ingredients

  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 50 grams Unsalted butter (cold, cubed)
  • 100 grams Cheddar cheese (grated)
  • 150 milliliters Milk
  • 1 piece Egg (beaten, for glazing)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients and rub it in with your fingertips until the mixture resembles fine breadcrumbs.

Step 4

Stir in the grated Cheddar cheese, reserving a small handful to sprinkle on top of the scones before baking.

Step 5

Gradually add the milk, a little at a time, mixing with a fork or your hands until a soft dough forms. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat or roll it out to about 2 cm (¾ inch) thick.

Step 7

Use a round 6 cm (2½ inch) cutter to cut out the scones. Re-roll the scraps to make additional scones, being careful not to overwork the dough.

Step 8

Place the scones on the prepared baking tray, ensuring they are slightly spaced apart. Brush the tops with beaten egg and sprinkle with the reserved grated cheese.

Step 9

Bake in the preheated oven for 10-12 minutes or until golden brown and well risen.

Step 10

Remove from the oven and let the scones cool slightly on a wire rack. Serve warm with butter, or enjoy them plain for a cheesy treat!
