Ingredients

  • 2 tablespoons unsalted butter
  • 1 cup yellow onion, finely chopped
  • 1 cup red bell pepper, finely chopped
  • 1 cup celery, finely chopped
  • 2 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper, freshly ground
  • 0.25 teaspoon cayenne pepper
  • 1.5 pounds ground beef chuck
  • 0.75 pounds ground pork
  • 1 egg, lightly beaten
  • 0.75 cup Evaporated milk
  • 1 tablespoon Worcestershire sauce
  • 0.75 cup Italian-style breadcrumbs
  • 0.5 cup ketchup
  • 1 tablespoon light brown sugar
  • 1 teaspoon yellow mustard

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a medium skillet, melt the butter over medium heat. Add the onion, red bell pepper, celery, and garlic. Cook, stirring frequently, for about 5 minutes or until the vegetables are softened. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, cooked vegetable mixture, salt, black pepper, cayenne pepper, beaten egg, evaporated milk, Worcestershire sauce, and breadcrumbs. Use your hands or a large spoon to mix until just combined—avoid overmixing.

Step 4

Transfer the meat mixture to the prepared pan or baking sheet, shaping it into a loaf if using the sheet.

Step 5

In a small bowl, mix the ketchup, brown sugar, and mustard together to make the glaze. Spread the glaze evenly over the top of the meatloaf.

Step 6

Bake in the preheated oven for 50-60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 7

Let the meatloaf rest for 5-10 minutes before slicing. Serve warm and enjoy!
