Ingredients

  • 16 oz Elbow macaroni
  • 0.5 cup Unsalted butter
  • 0.25 cup All-purpose flour
  • 4 cups Whole milk
  • 1 cup Heavy cream
  • 2 cups Sharp cheddar cheese, shredded
  • 1.5 cups Monterey Jack cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.5 tsp Ground mustard
  • 0.25 tsp Paprika
  • 1 cup Panko breadcrumbs
  • 2 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with butter or non-stick spray.

Step 2

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, about 7-8 minutes. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes while stirring constantly to form a roux.

Step 4

Gradually pour in the milk and heavy cream, whisking constantly to combine. Cook until the mixture thickens slightly, about 5-7 minutes.

Step 5

Lower the heat and stir in the shredded cheddar, Monterey Jack, Parmesan cheese, salt, black pepper, ground mustard, and paprika. Stir until the cheese is fully melted and the sauce is smooth.

Step 6

Combine the cooked macaroni with the cheese sauce in the saucepan, mixing well to coat each piece of pasta.

Step 7

Pour the mac and cheese mixture into the prepared baking dish, spreading it out evenly.

Step 8

In a small bowl, mix the panko breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumb mixture evenly over the mac and cheese.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Step 10

Allow the dish to cool for 5 minutes before serving. Enjoy piping hot!
