Ingredients

  • 4 cups Fresh corn kernels (from about 4 ears of corn)
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Butter
  • 3 cups Vegetable stock
  • 1 cup Heavy cream
  • 0.5 teaspoons Ground cumin
  • 1 teaspoon Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro, chopped (for garnish)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Heat the butter in a large pot over medium heat until melted.

Step 2

Add the chopped onion and cook for 5 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic and ground cumin, cooking for another minute until fragrant.

Step 4

Add the fresh corn kernels and vegetable stock to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 15 minutes, allowing the corn to soften and the flavors to meld.

Step 5

Using an immersion blender, puree the soup directly in the pot until smooth. Alternatively, transfer the mixture in batches to a blender and blend until creamy. Be cautious with hot liquids.

Step 6

Return the pureed soup to the pot if using a blender. Stir in the heavy cream, salt, and black pepper. Cook for an additional 5 minutes on low heat, but do not let it boil.

Step 7

Taste and adjust seasoning if needed. Ladle the soup into bowls, garnish with fresh cilantro, and serve with lime wedges on the side for added brightness.
