Ingredients

  • 300 g penne pasta
  • 250 g cherry tomatoes
  • 1 large cucumber
  • 1 small red onion
  • 100 g black olives
  • 150 g feta cheese
  • 4 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking. Set aside.

Step 2

While the pasta cooks, halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and roughly chop the black olives. Place these ingredients in a large mixing bowl.
