Ingredients

  • 225 grams unsalted butter
  • 150 grams granulated sugar
  • 150 grams light brown sugar
  • 60 grams glucose syrup (or light corn syrup)
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 225 grams all-purpose flour
  • 2 grams baking powder
  • 1 gram baking soda
  • 4 grams kosher salt
  • 50 grams rolled oats
  • 135 grams mini chocolate chips
  • 100 grams butterscotch chips
  • 65 grams crushed potato chips
  • 65 grams crushed pretzels
  • 2 grams ground coffee

Directions

Step 1

In a stand mixer fitted with the paddle attachment, cream the butter, granulated sugar, and brown sugar on medium-high speed for 2-3 minutes until light and fluffy.

Step 2

Add the glucose syrup and vanilla extract. Mix for an additional 2-3 minutes until the mixture is fully combined.

Step 3

With the mixer on low, add the eggs one at a time, ensuring each is fully incorporated before adding the next.

Step 4

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Step 5

Add the oats, chocolate chips, butterscotch chips, potato chips, pretzels, and ground coffee to the batter. Mix on low speed until evenly distributed, being careful not to overmix.

Step 6

Using a 1/4-cup cookie scoop or a large spoon, portion the dough onto a lined baking sheet, spacing them at least 3 inches apart. Flatten the tops slightly with your hand or a spatula.

Step 7

Refrigerate the shaped cookie dough for at least 1 hour or up to overnight. This helps the cookies keep their shape and ensures a chewier texture.

Step 8

Preheat your oven to 375°F (190°C).

Step 9

Bake the cookies in the preheated oven for 15-18 minutes, or until the edges are golden brown and the centers look just set.

Step 10

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the cookies in an airtight container at room temperature for up to one week.
