Ingredients

  • 4 pieces Large flour tortillas
  • 1 cup Hummus
  • 4 leaves Romaine lettuce
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 1 cup Shredded carrots
  • 1 large Avocado
  • 0.5 medium Red onion
  • 0.5 cup Feta cheese (optional)
  • 3 tablespoons Balsamic vinaigrette dressing
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and prepare all the vegetables: thinly slice the red bell pepper, cucumber, and red onion. Shred the carrots if not pre-shredded. Peel and slice the avocado into thin strips.

Step 2

Lay a tortilla flat on a clean surface or a plate. Spread about 2 tablespoons of hummus evenly across the center of the tortilla, leaving a border around the edges.

Step 3

Place one romaine lettuce leaf in the center of the tortilla over the hummus.

Step 4

Layer the sliced red bell pepper, cucumber, shredded carrots, avocado slices, and red onion on top of the lettuce. Sprinkle with feta cheese if using.

Step 5

Drizzle about 1 teaspoon of balsamic vinaigrette over the vegetables. Season with a pinch of salt and black pepper to taste.

Carefully fold in the sides of the tortilla, then roll it tightly from the bottom upwards, ensuring the filling stays intact.
