Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 4 tablespoons Vegetable oil
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Paprika (optional)
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and rinse them under cold water. Pat them dry with a clean kitchen towel.

Step 2

Slice the potatoes into thin rounds, about 1/4 inch thick. Alternatively, you can dice them into small cubes if preferred.

Step 3

Peel the onion and slice it thinly.

Step 4

Heat a large, heavy-bottomed skillet over medium heat and add the vegetable oil and butter. Allow the butter to melt completely.

Step 5

Add the sliced potatoes to the skillet in a single layer, reducing the heat to medium-low. Let them cook undisturbed for 5 minutes to develop a golden crust.

Step 6

Gently flip the potatoes, making sure not to overcrowd the skillet. Add the sliced onion and continue cooking, stirring occasionally, for another 10 minutes.

Step 7

Season the potatoes and onions with salt, black pepper, garlic powder, and paprika (if using). Stir to coat the potatoes evenly with the seasonings.

Step 8

Cook for another 10 minutes, stirring occasionally, until the potatoes are cooked through, golden brown, and crisp on the edges.

Step 9

Taste for seasoning and adjust salt and pepper as needed.

Step 10

Transfer the fried potatoes and onions to a serving dish. Garnish with freshly chopped parsley if desired.

Step 11

Serve immediately as a side dish or enjoy on their own with your favorite dipping sauce.
