Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 0.75 cup Brown sugar, packed
  • 0.25 cup Granulated sugar
  • 1 cup Pure pumpkin puree
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chocolate chips or raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream the softened butter, brown sugar, and granulated sugar until light and fluffy.

Step 4

Mix in the pumpkin puree and vanilla extract until well combined.

Step 5

Gradually add the dry ingredients into the wet ingredients, mixing just until no streaks of flour remain. Do not overmix.

Step 6

If using, fold in the chocolate chips or raisins for a hint of sweetness.

Step 7

Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set and the tops are no longer wet.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 2-3 minutes, then transfer them to a wire rack to cool completely.

Step 10

Store leftover cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
