Ingredients

  • 1 cup Granulated Sugar
  • 6 tablespoons Unsalted Butter
  • 0.5 cup Heavy Cream
  • 1 pinch Salt
  • 1 teaspoon Vanilla Extract

Directions

Step 1

In a medium heavy-bottomed saucepan, heat the sugar over medium heat, stirring constantly with a heatproof spatula or wooden spoon. The sugar will begin to clump together before melting into a smooth, amber-colored liquid. Be patient and avoid overheating, as sugar can burn quickly.

Step 2

Once the sugar is melted and golden, reduce the heat to low and carefully add the butter. The mixture will bubble up vigorously, so take caution. Stir until the butter is completely melted and combined with the sugar.

Step 3

Slowly and carefully pour in the heavy cream while stirring. The mixture will bubble up again, but continue stirring until everything is smooth and well incorporated.

Step 4

Add a pinch of salt and the vanilla extract, stirring to combine. Allow the caramel to simmer for about 1-2 minutes to thicken slightly.

Step 5

Remove the caramel from heat and let it cool for 5-10 minutes before transferring it to a heat-safe jar or container. The caramel will thicken further as it cools.

Step 6

Store the cooled caramel in an airtight container in the refrigerator for up to 2 weeks. Reheat gently before using if it becomes too thick.
