Ingredients

  • 3 large ripe bananas
  • 0.33 cup unsalted butter, melted
  • 0.5 cup granulated sugar
  • 0.25 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 0.5 cup chopped walnuts or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line a muffin tin with paper liners.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 3

Stir in the melted butter until well combined.

Step 4

Add the granulated sugar, brown sugar, eggs, and vanilla extract. Whisk together until the mixture is smooth and creamy.

Step 5

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon (if using).

Step 6

Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. Stop as soon as you no longer see streaks of flour.

Step 7

If you're adding walnuts or chocolate chips, gently fold them into the batter at this stage.

Step 8

Pour the batter evenly into the prepared loaf pan or divide it among the muffin cups, filling each about 3/4 full.

Step 9

For bread: Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean. For muffins: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove from the oven and allow the bread or muffins to cool in the pan for 10 minutes. Then transfer them to a wire rack to cool completely.

Step 11

Slice and serve the banana bread, or enjoy the muffins warm or at room temperature. Store leftovers in an airtight container for up to 3 days (or refrigerate for longer storage).
