Ingredients

  • 1 head Romaine lettuce
  • 1.5 cups Cherry tomatoes
  • 1 Cucumber

  • 0.75 cup Kalamata olives
  • 1 cup Artichoke hearts (marinated)
  • 0.5 cup Roasted red peppers (sliced)
  • 4 ounces Salami (thinly sliced and chopped)
  • 3 ounces Prosciutto (thinly sliced and chopped)
  • 1 cup Mozzarella balls (ciliegine)
  • 0.5 cup Parmesan cheese (shaved)
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the romaine lettuce. Chop it into bite-sized pieces and place in a large salad bowl.

Step 2

Slice the cherry tomatoes in half, peel and slice the cucumber into half-moons, and thinly slice the red onion. Add them to the salad bowl.

Drain the Kalamata olives and marinated artichoke hearts. Chop the artichoke hearts into smaller pieces if necessary. Add them to the bowl along with the roasted red peppers.
