Ingredients

  • 1 pound kielbasa sausage
  • 16 ounces sauerkraut
  • 1 large yellow onion
  • 2 tablespoons unsalted butter
  • 1 large apple (such as Granny Smith or Honeycrisp)
  • 1 tablespoon brown sugar
  • 1 tablespoon whole grain mustard
  • 1 teaspoon caraway seeds (optional)
  • 0.5 teaspoon black pepper
  • 0.5 cup chicken broth

Directions

Step 1

Slice the kielbasa sausage into 1/2-inch thick rounds. Set aside.

Step 2

Rinse the sauerkraut under cold water and drain well to reduce the brininess. Set aside.

Step 3

Peel and thinly slice the yellow onion. Core and thinly slice the apple into wedges.

Step 4

In a large skillet or Dutch oven, melt the unsalted butter over medium heat.

Step 5

Add the sliced onions and apples to the skillet. Sauté for 5–7 minutes, stirring occasionally, until softened and beginning to caramelize.

Step 6

Stir in the brown sugar, whole grain mustard, and caraway seeds (if using). Cook for another minute until well combined.

Step 7

Add the rinsed sauerkraut to the skillet and toss to combine with the onion-apple mixture.

Step 8

Nestle the kielbasa slices into the sauerkraut mixture. Sprinkle with black pepper.

Step 9

Pour the chicken broth over the mixture and gently stir. Reduce the heat to low, cover the skillet, and simmer for 20 minutes.

Step 10

Remove the lid and stir the dish gently. Taste and adjust seasoning if needed.

Step 11

Serve hot with crusty bread, mashed potatoes, or simply as is for a hearty meal!
