Ingredients

  • 500 grams Pumpkin, peeled and diced
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1 tablespoon Curry powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Cayenne pepper (optional)
  • 1 cup Vegetable broth
  • 1 tablespoon Brown sugar
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Begin by peeling and dicing your pumpkin into bite-sized cubes. Set them aside.

Step 2

In a large non-stick skillet or saucepan, add the chopped onion, garlic, and ginger. Sauté on medium heat using a splash of vegetable broth (instead of oil) to prevent sticking. Cook for about 3-4 minutes until the onion softens and becomes translucent.

Step 3

Add the curry powder, ground cumin, and cayenne pepper (if using) to the pan. Stir constantly for 1 minute to toast the spices and amplify their flavors.

Step 4

Add the diced pumpkin to the pan, tossing to coat the pieces evenly in the spiced onion mixture.

Step 5

Pour in the vegetable broth, then sprinkle in the brown sugar and salt. Stir well to combine.

Step 6

Turn the heat to low and cover the pan with a lid. Simmer for 15-20 minutes, stirring occasionally, until the pumpkin is tender and can be pierced easily with a fork.

Step 7

Remove the lid and let the mixture cook for an additional 2-3 minutes to thicken slightly.

Step 8

Taste and adjust seasoning, adding more salt, sugar, or cayenne pepper as preferred.

Step 9

Garnish with freshly chopped cilantro, if desired, before serving. This dish pairs wonderfully with steamed rice or warm flatbread.
