Ingredients

  • 2.5 cups All-purpose flour
  • 2 cups Granulated sugar
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 cup Vegetable oil
  • 1 cup Buttermilk
  • 2 Eggs
  • 2 tablespoons Red food coloring
  • 2 teaspoons Vanilla extract
  • 1 teaspoon White vinegar
  • 8 ounces Cream cheese (softened)
  • 1 cup Unsalted butter (softened)
  • 4 cups Powdered sugar
  • 2 tablespoons Heavy cream
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.

Step 3

In another medium bowl, combine the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar. Mix until smooth and fully blended.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently until no lumps remain. Be careful not to overmix.

Step 5

Divide the batter evenly between the prepared cake pans, smoothing the tops with a spatula.

Step 6

Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

Allow the cakes to cool in the pans for 10 minutes, then carefully remove them from the pans and transfer to a wire rack to cool completely.

Step 8

For the cream cheese frosting, beat the cream cheese and butter together in a large bowl using an electric mixer on medium speed until smooth and fluffy.

Step 9

Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition.

Step 10

Stir in the heavy cream and vanilla extract, and beat until the frosting is light and creamy.

Step 11

Place one cake layer on a serving plate or cake stand, and spread a generous layer of frosting over the top.

Step 12

Top with the second cake layer, and frost the top and sides of the entire cake evenly.

Step 13

Decorate as desired and refrigerate for 30 minutes before serving to set the frosting.

Step 14

Serve the cake at room temperature. Enjoy Mimi's Red Velvet Cake with friends and family!
