  • 0.5 pounds Chicken livers, finely chopped

  • 1 Green bell pepper, finely diced
  • 2 Celery stalks, finely diced
  • 4 Garlic cloves, minced
  • 1.5 tablespoons Cajun seasoning
  • 1 teaspoons Dried thyme
  • 1 teaspoons Smoked paprika
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 3 Green onions, thinly sliced
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Rinse the rice thoroughly in cold water until the water runs clear. Drain and set aside.

Step 2

In a medium saucepan, combine the rice and chicken stock. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork and set aside.
