Ingredients

  • 250 grams all-purpose flour
  • 175 grams unsalted butter (for shortbread)
  • 75 grams caster sugar
  • 150 grams unsalted butter (for caramel)
  • 150 grams caster sugar (for caramel)
  • 4 tablespoons golden syrup
  • 1 400g can sweetened condensed milk
  • 200 grams milk chocolate
  • 100 grams dark chocolate

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a 9-inch square baking tin with parchment paper, leaving some overhang for easy removal.

Step 2

To make the shortbread, combine 250g of all-purpose flour and 75g of caster sugar in a large bowl. Add 175g of unsalted butter, cut into small cubes.

Step 3

Use your fingertips to rub the butter into the flour mixture until it resembles fine breadcrumbs. Then, press the mixture firmly and evenly into the prepared baking tin.

Step 4

Bake in the preheated oven for 20 minutes, or until a light golden brown. Remove from the oven and set aside to cool completely.

Step 5

While the shortbread cools, start the caramel by melting 150g of unsalted butter in a medium saucepan over low heat.

Step 6

Stir in 150g of caster sugar and 4 tablespoons of golden syrup. Continue to cook gently, stirring until the sugar dissolves.

Add the contents of 1 can (about 400g) of sweetened condensed milk to the saucepan. Increase the heat slightly and bring the mixture to a gentle boil, stirring continuously to prevent it from burning.

Cook for about 5-10 minutes, or until the caramel turns a golden brown and thickens. Pour the caramel over the cooled shortbread base, spreading it evenly.

Allow the caramel layer to cool and set, which will take around 20 minutes.

For the chocolate topping, melt 200g of milk chocolate and 100g of dark chocolate together in a heatproof bowl over a pan of simmering water, ensuring the bowl doesn’t touch the water.

Once melted and smooth, pour the chocolate over the set caramel layer, spreading it evenly with a spatula.

Let the millionaire’s shortbread cool at room temperature and then refrigerate for several hours or until completely set.

Step 13

Once set, use the parchment paper overhang to lift the shortbread out of the tin. Cut into 16 squares using a sharp knife.
