Ingredients

  • 4 tablespoons Butter
  • 2 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Onion, finely chopped
  • 1 medium Green bell pepper, diced
  • 1 cup Button mushrooms, sliced
  • 3 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Milk
  • 0.5 cup Heavy cream
  • 4 servings Cooked rice, toast, or puff pastry
  • 2 tablespoons Parsley, chopped (optional)

Directions

Step 1

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 2

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side until fully cooked and browned. Remove chicken from the skillet, let rest for a few minutes, and then dice or shred into bite-sized pieces. Set aside.

Step 3

In the same skillet, melt the remaining 2 tablespoons of butter. Add the chopped onion, diced green bell pepper, and sliced mushrooms. Sauté for 5-7 minutes or until the vegetables are tender.

Step 4

Sprinkle the flour over the sautéed vegetables and stir well to coat them evenly. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 5

Slowly pour in the chicken broth, stirring constantly to avoid lumps. Then add the milk and continue stirring until the mixture thickens into a creamy sauce.

Step 6

Stir in the heavy cream, the remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Add the diced or shredded chicken back to the skillet, and simmer on low heat for 5 minutes to combine flavors.

Step 7

Taste and adjust seasoning if necessary. If the sauce is too thick, add a splash of chicken broth or milk to reach your desired consistency.

Step 8

Serve the Chicken a La King hot over cooked rice, toast, or puff pastry. Garnish with chopped parsley for an extra pop of color and flavor, if desired.
