Ingredients

  • 2 pounds ground beef (80/20 lean-to-fat ratio)
  • 1 cup breadcrumbs
  • 0.5 cup whole milk
  • 1 medium yellow onion, finely diced
  • 3 pieces garlic cloves, minced
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 0.25 cup ketchup
  • 2 tablespoons parsley, chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 cup ketchup (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 1 teaspoon apple cider vinegar (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine breadcrumbs and milk. Let the mixture sit for 2-3 minutes to allow the breadcrumbs to absorb the milk.

Step 3

Add the ground beef, diced onion, minced garlic, eggs, Worcestershire sauce, ketchup, parsley, salt, and black pepper to the breadcrumb mixture. Mix everything together gently with your hands until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 4

Shape the meat mixture into a rectangular loaf on the prepared baking sheet, or transfer it to the loaf pan, pressing it gently to form an even shape.

Step 5

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze. Spread half of the mixture evenly over the top of the meatloaf.

Step 6

Bake the meatloaf in the preheated oven for 45 minutes. Remove it from the oven and spread the remaining glaze on top. Return it to the oven and bake for another 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 7

Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite sides, such as mashed potatoes or steamed vegetables.
