Ingredients

  • 3 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 2 cups baby carrots
  • 6 medium red potatoes
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Directions

Step 1

Season the beef chuck roast on both sides with salt, pepper, and garlic powder.

Heat the olive oil in a large skillet over medium-high heat. Sear the beef on all sides until a golden-brown crust forms (about 4-5 minutes per side). Remove from the skillet and set aside.

Peel and slice the yellow onion into thick rings. Layer the onion slices on the bottom of the crock pot.
