Ingredients

  • 3 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 tablespoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and diced
  • 3/4 cup buttermilk
  • 1 unit large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream (for brushing)
  • 1 tablespoon coarse sugar (for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Step 3

Add the cold, diced butter to the dry mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits of butter remaining.

Step 4

In a separate bowl, whisk together the buttermilk, egg, and vanilla extract until well combined.

Step 5

Pour the wet ingredients into the dry ingredients and gently mix until the dough just comes together. Be careful not to overmix; the dough should be slightly shaggy.

Step 6

Turn the dough out onto a lightly floured surface and pat it into an 8-inch round disc, about 1-inch thick. Use a sharp knife or bench scraper to cut the disc into 8 equal wedges.

Step 7

Transfer the wedges to the prepared baking sheet, spacing them slightly apart. Brush the tops with heavy cream and sprinkle with coarse sugar for added sweetness and texture.

Step 8

Bake in the preheated oven for 16–18 minutes, or until the scones are golden brown and the tops are firm to the touch.

Step 9

Remove the scones from the oven and allow them to cool slightly on the baking sheet before transferring them to a wire rack.

Step 10

Serve warm or at room temperature with your favorite accompaniments such as butter, jam, or clotted cream.
