Ingredients

  • 12 pieces Manicotti shells
  • 1 tablespoon Olive oil
  • 2 cups Ricotta cheese
  • 1 cup Parmesan cheese, grated
  • 2 cups Mozzarella cheese, shredded
  • 10 ounces Frozen spinach, thawed and drained
  • 2 large Eggs
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Nutmeg
  • 3 cups Marinara sauce
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add 1 tablespoon of olive oil and cook the manicotti shells for 6-8 minutes, or until just al dente. Drain and rinse the shells with cold water to stop the cooking process. Set them aside on a parchment-lined tray.

Step 3

In a large mixing bowl, combine the ricotta cheese, 1/2 cup of Parmesan cheese, 1 cup of mozzarella cheese, drained spinach, eggs, minced garlic, salt, black pepper, and nutmeg. Mix until well incorporated.

Step 4

Using a piping bag (or a spoon), gently fill each manicotti shell with the ricotta-spinach mixture. Be careful not to tear the shells while filling them.

Step 5

Spread 1 cup of marinara sauce evenly over the bottom of a 9x13-inch baking dish.

Step 6

Arrange the filled manicotti shells in a single layer on top of the marinara sauce in the dish.

Step 7

Pour the remaining 2 cups of marinara sauce evenly over the manicotti shells, ensuring each is well-covered.

Step 8

Sprinkle the remaining 1/2 cup of Parmesan cheese and 1 cup of mozzarella cheese over the top of the dish.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 10

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Step 11

Let the baked manicotti rest for 5-10 minutes before serving. Garnish with fresh parsley and serve hot.
