Ingredients

  • 175 grams butter
  • 175 grams dark muscovado sugar
  • 100 ml maple syrup
  • 225 grams self-raising flour
  • 1 teaspoon baking powder
  • 2 tablespoons milk
  • 3 large eggs
  • 50 grams walnuts (optional, chopped)
  • 2 tablespoons maple syrup (for topping)

Directions

Step 1

Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line a 20cm (8-inch) round cake tin with parchment paper.

Step 2

In a large mixing bowl, cream together the butter and dark muscovado sugar until pale and fluffy.

Step 3

Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Add the maple syrup and mix well.

Step 4

Sift together the self-raising flour and baking powder, then gently fold them into the wet mixture using a spatula or wooden spoon. Be careful not to overmix.

Step 5

Stir in the milk and chopped walnuts, if using, until just combined.

Step 6

Transfer the batter to the prepared cake tin and level the top with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes, or until a skewer inserted into the center of the cake comes out clean.

Step 8

Remove the cake from the oven and leave it to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.

Step 9

Once the cake has cooled, drizzle 2 tablespoons of maple syrup over the top for extra sweetness and a glossy finish.

Step 10

Slice and serve. Enjoy your delicious Maple Syrup Cake!
