Ingredients

  • 2 cups Fresh corn kernels (or canned, drained)
  • 1 cup All-purpose flour
  • 0.5 cup Cornmeal
  • 1 teaspoon Baking powder
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 Eggs, lightly beaten
  • 0.5 cup Milk
  • 2 tablespoons Unsalted butter, melted
  • 0.5 cup Vegetable oil (for frying)
  • 2 tablespoons Chopped scallions (optional garnish)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, sugar, salt, and black pepper. Whisk until well combined.

Step 2

Add the fresh corn kernels to the dry ingredients and stir to coat the kernels evenly.

Step 3

In a separate smaller bowl, whisk together the eggs, milk, and melted butter until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and mix gently until the batter is just combined. Be careful not to overmix.

Step 5

Heat the vegetable oil in a large skillet or frying pan over medium heat. The oil should be about 1/4 inch deep.

Step 6

Once the oil is hot, use a 1/4-cup measuring cup to scoop the batter and carefully drop it into the skillet. Flatten slightly with the back of a spoon, if needed.

Step 7

Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. Work in batches, being careful not to overcrowd the pan.

Step 8

Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.

Step 9

Repeat with the remaining batter, adding more oil to the pan if necessary.

Step 10

Serve the fritters warm, garnished with chopped scallions if desired. Enjoy as a side dish, snack, or appetizer!
