Ingredients

  • 4 large Potatoes
  • 2 medium Sweet potatoes
  • 2 medium Zucchini
  • 3 large Carrots
  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 3 cloves Garlic cloves
  • 1 tablespoon Fresh thyme
  • 1 cup Grated Parmesan cheese
  • 1.5 cups Shredded Gruyère cheese
  • 1 cup Panko breadcrumbs
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Butter (for greasing dish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Grease a 9x13-inch baking dish with the butter and set aside.

Step 3

Peel the potatoes, sweet potatoes, and carrots. Thinly slice all the vegetables (potatoes, sweet potatoes, zucchini, and carrots) into 1/8-inch rounds using a sharp knife or mandoline slicer.

Step 4

In a medium saucepan, combine the heavy cream, milk, minced garlic cloves, thyme, salt, and black pepper. Heat over medium-low heat until warm, but do not let it boil. Remove from heat.

Step 5

Layer the vegetables in the prepared baking dish. Start with a layer of potatoes, followed by sweet potatoes, zucchini, and carrots. Repeat the layers until all the vegetables are used, slightly overlapping the slices.

Step 6

Pour the warm cream mixture evenly over the layered vegetables, ensuring it seeps through to the bottom.

Step 7

In a small bowl, mix the grated Parmesan, shredded Gruyère, and panko breadcrumbs. Drizzle the olive oil into the mixture and toss until evenly combined.

Step 8

Sprinkle the cheese and breadcrumb mixture evenly over the vegetables.

Step 9

Cover the dish loosely with aluminum foil and bake in the preheated oven for 40 minutes.

Step 10

Remove the foil and bake uncovered for an additional 20 minutes, or until the top is golden brown and the vegetables are tender when pierced with a fork.

Step 11

Remove the gratin from the oven and let it rest for 5-10 minutes before serving.

Step 12

Serve warm and enjoy!
