Ingredients

  • 500 grams Button mushrooms
  • 250 milliliters White vinegar
  • 250 milliliters Water
  • 50 grams Granulated sugar
  • 15 grams Kosher salt
  • 4 pieces Garlic cloves
  • 2 teaspoons Black peppercorns
  • 2 pieces Bay leaves
  • 2 sprigs Fresh dill
  • 1 teaspoon Red chili flakes

Directions

Step 1

Clean the mushrooms by gently brushing off any dirt with a damp paper towel or soft brush. Trim stems if necessary.

Step 2

In a medium saucepan, combine white vinegar, water, granulated sugar, and kosher salt. Heat over medium heat until the sugar and salt fully dissolve. Remove the brine from heat and let it cool slightly.

Step 3

Peel the garlic cloves and lightly smash them with the flat side of a knife.

Step 4

Fill a clean, sterilized jar (about 1-liter capacity) with the prepared mushrooms, garlic cloves, black peppercorns, bay leaves, fresh dill sprigs, and red chili flakes.

Step 5

Pour the warm brine over the mushrooms in the jar, ensuring they are fully submerged. If needed, use a small weight or folded piece of parchment paper to keep the mushrooms under the liquid.

Step 6

Seal the jar tightly and let it cool to room temperature. Once cooled, place the jar in the refrigerator.

Step 7

Allow the mushrooms to pickle for at least 24 hours before consuming for best flavor. They will keep in the refrigerator for up to 2 weeks.
