Ingredients

  • 300 g All-purpose flour
  • 100 g Whole wheat flour
  • 7 g Instant yeast
  • 1 tsp Salt
  • 120 g Low-fat plain yogurt
  • 180 ml Warm water
  • 1 tbsp Honey
  • 1 tbsp Olive oil (for dough)
  • 2 tbsp Za'atar spice blend
  • 1 tbsp Olive oil (for topping)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, instant yeast, and salt. Mix well.

Step 2

Add the low-fat plain yogurt, warm water, honey, and 1 tablespoon of olive oil to the dried ingredients. Stir until the dough begins to come together.

Step 3

Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-7 minutes.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.

Step 5

Once the dough has risen, punch it down and divide it into 6 equal portions. Roll each portion into a ball.

Step 6

On a clean, floured surface, roll out each dough ball into a thin circle or oval, about 8–10 inches in diameter.

Step 7

Preheat a large non-stick skillet or griddle over medium-high heat. Brush lightly with olive oil.

Step 8

Cook each laffa on the hot skillet for 1-2 minutes on one side, or until bubbles form and the bottom develops golden spots. Flip and cook for another 1-2 minutes until puffed and evenly cooked.

Step 9

While the laffa is still warm, brush lightly with olive oil and sprinkle generously with za'atar spice blend.

Step 10

Serve immediately or store in an airtight container for up to 2 days. Reheat as needed before serving.
