Ingredients

  • 150 grams poppy seeds
  • 250 ml skim milk
  • 100 grams sugar
  • 100 grams applesauce (unsweetened)
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 150 grams all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 180°C (356°F) and grease a 9-inch round cake tin with a little butter or line it with parchment paper.

Step 2

In a small saucepan, combine the poppy seeds and skim milk. Heat over medium heat until the mixture starts to simmer. Then, reduce the heat to low and let it cook, stirring occasionally, for about 5 minutes until the poppy seeds absorb the milk. Remove from heat and let it cool to room temperature.

Step 3

In a mixing bowl, whisk together the sugar, applesauce, and eggs until smooth and creamy.

Step 4

Add the vanilla extract and lemon zest to the egg mixture and mix well.

Step 5

In a separate bowl, sift together the flour, baking powder, and salt. Gradually add these dry ingredients to the wet mixture, folding gently until well combined.

Step 6

Add the cooled poppy seed mixture to the cake batter and fold until evenly distributed.

Step 7

Pour the batter into the prepared cake tin, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the tin for about 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Serve slices plain or with a dollop of low-fat Greek yogurt for an extra touch.
