Ingredients

  • 500 grams Bottle Gourd (Kaddu)
  • 1 liter Toned Milk
  • 3 tablespoons Skimmed Milk Powder
  • 4 tablespoons Sugar
  • 1 teaspoon Cardamom Powder
  • 10 whole Almonds
  • 10 whole Cashews
  • 20 pieces Raisins
  • 10 strands Saffron Strands (optional)

Directions

Step 1

Start by peeling the bottle gourd and grating it finely.

Step 2

Squeeze out the excess water from the grated bottle gourd using your hands or a clean kitchen towel.

Step 3

In a thick-bottomed pot, bring the toned milk to a boil over medium heat.

Step 4

Once the milk comes to a boil, reduce the heat to low and add the grated bottle gourd.

Stir occasionally and let it cook for about 20 minutes, or until the bottle gourd is tender and the milk has reduced slightly.

Mix the skimmed milk powder with a little water to form a smooth paste, then add it to the pot. This will help in thickening the kheer without adding excess fat.
