Ingredients

  • 3 medium Russet potatoes
  • 0 Olive oil cooking spray
  • 0.25 cup Non-fat Greek yogurt
  • 1 tablespoon Onion powder
  • 1 tablespoon Dried chives
  • 0.5 teaspoon Garlic powder
  • 0.75 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

Wash and peel the potatoes. Use a mandoline slicer to cut the potatoes into thin, even slices, about 1/16 inch thick.

Step 3

Place the potato slices in a large bowl of cold water and let them soak for about 10 minutes. This helps remove excess starch which makes the chips crispier.

Step 4

Drain and rinse the potato slices under cold water. Pat them dry with a clean kitchen towel or paper towels.

Step 5

Arrange the potato slices on the prepared baking sheets in a single layer. Be sure not to overlap them for even cooking.

Step 6

Lightly spray the potato slices with olive oil cooking spray.

Step 7

In a small bowl, mix together the non-fat Greek yogurt, onion powder, dried chives, garlic powder, salt, and black pepper until well combined.

Step 8

Spray the potato slices with the seasoning mix using a specialized food-safe spray bottle or carefully brush the mixture onto the slices.

Step 9

Bake in the preheated oven for about 20-25 minutes, or until the potato chips are golden brown and crispy. Flip the chips halfway through the baking time for even cooking.

Step 10

Remove the chips from the oven and allow them to cool on the baking sheets for a few minutes before serving. As they cool, they will continue to crisp up.
