Ingredients

  • 8 ounces Whole wheat elbow macaroni
  • 1 cup Low-fat milk
  • 1.5 cups Low-fat sharp cheddar cheese, grated
  • 2 tablespoons Low-fat cream cheese
  • 1 tablespoon Butter
  • 2 tablespoons All-purpose flour
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Mustard powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole wheat elbow macaroni and cook according to package instructions until al dente, about 8 minutes. Drain and set aside.

Step 2

In the same pot, melt the butter over medium heat. Add the flour and whisk constantly for about 1 minute until it forms a paste and begins to bubble.

Step 3

Slowly pour in the low-fat milk, whisking continuously to avoid lumps. Cook over medium heat until the mixture thickens, about 3-4 minutes.

Step 4

Reduce the heat to low and add the grated low-fat sharp cheddar cheese and low-fat cream cheese to the pot. Stir continuously until fully melted and smooth.

Step 5

Sprinkle in the garlic powder, mustard powder, salt, and black pepper. Stir well to combine all the flavors.

Step 6

Add the cooked macaroni back into the pot with the cheese sauce. Stir until the pasta is evenly coated with the sauce.

Step 7

Serve the mac and cheese hot, garnished with additional black pepper if desired.
