Ingredients

  • 320 grams All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • 100 grams Butter (reduced-fat)
  • 100 grams Granulated Sugar
  • 2 large Eggs
  • 2 tablespoons Cold Water
  • 750 grams Apples (Granny Smith or similar)
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Ground Cinnamon
  • 50 grams Raisins
  • 1 tablespoon Cornstarch
  • 1 teaspoon Vanilla Extract
  • 50 grams Brown Sugar

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch springform pan lightly with butter or a non-stick spray.

Step 2

In a large bowl, mix together the flour, baking powder, and salt. Rub in the reduced-fat butter until the mixture resembles breadcrumbs.

Step 3

Add the granulated sugar, one egg, and cold water, mixing until the dough comes together. Avoid over-kneading. Wrap the dough in plastic wrap and let it rest in the fridge for about 20 minutes.

Step 4

Peel, core, and chop the apples into small cubes. Place them in a bowl and toss with lemon juice, ground cinnamon, raisins, cornstarch, vanilla extract, and brown sugar.

Step 5

Take out the dough and divide it into two portions, one slightly larger than the other. Roll out the larger portion and use it to line the base and sides of the prepared springform pan, pressing up the sides with your fingers.

Step 6

Fill the lined shell with the apple mixture, ensuring it’s evenly distributed.

Step 7

Roll out the remaining dough and cut into strips. Lay the strips over the apple filling in a crisscross lattice pattern.

Step 8

Beat the remaining egg and brush over the lattice and edges of the crust to give it a golden finish when baked.

Step 9

Place the pie in the preheated oven and bake for 60 minutes, or until the crust is golden and the apples are tender.

Step 10

Allow the pie to cool in the pan for about 10 minutes before releasing the springform. Serve warm or at room temperature, either plain or with a spoonful of low-fat yogurt or cream.
