Ingredients

  • 1.5 kg pork loin roast
  • 2 tablespoons olive oil
  • 4 pieces garlic cloves
  • 2 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 250 ml chicken broth

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Trim any excess fat from the pork loin roast and pat it dry with paper towels.

Step 3

Crush the garlic cloves and finely chop them. Strip the rosemary and thyme leaves from their stems and chop them finely.

In a small bowl, mix the olive oil, chopped garlic, rosemary, thyme, paprika, oregano, salt, and black pepper to form a paste.

Rub the herb and spice mixture all over the pork loin, making sure to coat it evenly.
