Ingredients

  • 1 medium-sized head Cauliflower
  • 2 tablespoons Olive oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 2 small Green chilies
  • 1 medium Onion
  • 0.5 teaspoon Turmeric powder
  • 0.25 cup Roasted peanuts
  • 0.5 teaspoon Salt
  • 0.25 cup Coriander leaves
  • 1 small Lemon

Directions

Step 1

Firstly, remove the leaves and stem from the cauliflower and cut it into florets. Wash well and pat dry with a clean kitchen towel.

Step 2

Grate the cauliflower florets using a box grater or a food processor to make a rice-like texture.

Step 3

Finely chop the green chilies and onions. Set aside.

Step 4

Heat the olive oil in a large pan or skillet over medium heat.

Step 5

Add mustard seeds and cumin seeds. Sauté until the mustard seeds start to crackle.

Step 6

Add the chopped green chilies and onions into the pan. Sauté until the onions turn translucent.

Step 7

Stir in the turmeric powder and mix well with the onions and chilies.

Add the grated cauliflower to the pan. Mix until the spices and onions are well combined with the cauliflower.

Cover and cook for about 5-7 minutes, stirring occasionally, until the cauliflower is cooked but not mushy.
